I have started teaching a class for Enrichment in my ward that revolves around OAMC. I thought it might be fun to film these classes and have them on the website.

FAQ's I have had an overwhelming amount of feeback and questions about the OAMC classes, and will try to answer some of the questions here that I get most often. DO YOU HAVE HANDOUTS? Yes, I have handouts for each class that I use. I will begin to post these with the lessons as I finish them. Unfortunately, I haven't had much editing time with work and other things happening, so the second class is coming. Honest! I don't have the original handouts for the first lesson though, since my computer died shortly after, and in the rebuilding process, those files were deleted. I will try to rebuild them soon. I'D LIKE TO START A CLASS HERE, BUT HOW DO I BEGIN? The best way, IMO, is to start with the basics. What freezes, what works for you, time and supply talk, etc. I did put a meal or two together to sample during the first class, but waited to assemble meals together until the second class. There is another class coming up! WHAT ARE THE BOOKS YOU MENTION IN THE FIRST CLASS? Since I have been asked this alot in emails, I am going to list some of the books I have found (many at reused bookshops) that have been helpful to me. Check your local library to see what you can find! The Ball Blue Book - This is updated frequently, and I picked my copy up at Wal-Mart when I was getting canning jars. Its a great resource for canning, dehydrating and freezing. The Amana Freezer Living Cookbook - ISBN 0-8092-5615-0 I picked this up at my local thrift store, and what a find it was! Printed back in the early 1980's, it was meant to help utilize the Amana line of freezers and (new!) microwave ovens. It also takes into consideration other new technology at the time; crock-pots and food processors. There are hundreds of pages of recipes, but the part I found most interesting were the tips and tricks. They cover everything from what freezes well to how to use your spices correctly when freezing foods. Fix-It and Forget-It Cookbook (Dawn J. Ranck and Phyllis Pellman Good) ISBN 1-56148-339-7 (comb-bound paperback) I love this cookbook. This is the one I make notes all over as to what was a hit and what was a miss with my family. Many of the recipes in here can be converted to freezer meals, and combines the timesaving powers of the freezer and the crockpot. Make Ahead Gourmet (Michael Roberts) - Previously Fresh From the Freezer ISBN0-688-08543-1 Another find that will get lots of use! WHERE IS CLASS 2 ? It's still on my video camera. I keep meaning to rip the video and edit it, but haven't quite gotten around to it yet. I do have it though, and it will be online eventually. YOU ALSO MENTION FREEZING FOR LUNCHES... I picked this up from the Amana book mentioned above. Sandwiches are a breeze to freeze. Just remember to not freeze them with veggies, mayo or other condiments on them. WHERE IS THE RECIPE FOR 'DAD'S BURGERS'? This is one of those recipes without precise measurements. So, here are the ingredients, and you can modify as you need to: Ground beef or chuck, Lawry's Season Salt, Dehydrated Onions I usually make 1/4 lb patties, or so. Flash freeze formed patties, and then place in freezer bags with a piece of wax paper inbetween each patty. I was able to pick up a hamburger press at my local grocery store recently, and it has really helped in the mass-production of Dad's burgers. In fact, he's firing up the grill tonight! :) |
